This summer as I was going through some of my "Granny's" keepsakes I came upon an article that she had written and subsequently published in The Dairyman in 1967 titled, "A boy and a calf...or--the story of "Mom's cheese". This article was a cornerstone in my quest for developing my Boutique dairy farm and making "Mom's Cheese".

My grandmother's cheese was coveted by the entire family but she never told anyone the recipe, or so I thought. Her cheese had special traits that the entire family loved, for example, the curds had a chewy, dry texture, seasoned well with salt and pepper, fresh leek or green onions from the garden, and a peculiar tartness.  But, my grandmother had creatively left the recipe for me in 1998 when she gave me a "How to make Cheese" book. On the outside cover of the book she wrote, "Weesie" (her nickname for me) some day I'll come knocking on your door and borrow this. Love always, G." Inside the book she had tucked her cheese recipe for me to find when the time was right. I accidently (or was it) came across this book this summer when in fact the time was right and I have tried to perfect her cheese. 

Granny was and is my role-model in this life and when I make her cheese I can see her contented knowing smile and I can hear her say "oh yummy, Weesie".  "Yes, we knew the facts of cattle breeding and cheese making, but now we live them in full, rich color" (Harwell, 1967). Guernsey Milk Has Arrived!

I spent the summer in search of the perfect cows to begin my "Boutique" dairy at The Waldo Way. I chose Guernseys number one because they are beautiful and docile which was a requirement. In addition, their milk is golden because it contains "beta" which gives it a deep, rich, creamy, golden hue. Their milk has a perfect balance of protein and butterfat that makes amazing cheeses.  

Meet "Providence", the first cow that I milked. How about that for destiny? Providence is a real jewel to brush-up on my milking skills. She was kind and forgiving as I made a number of mistakes that very first milking.
